Warm milk whisked with cocoa, sugar, and melted chocolate, finished with vanilla and marshmallows. Serves 2.

Hot Chocolate

 1 tbsp unsweetened cocoa powder
 1 tbsp sugar, or to taste
 2 whole milk (480ml), divided
 2 oz semisweet or dark chocolate, finely chopped (57g)
 ½ tsp vanilla extract
 1 pinch salt

Toppings

 ¼ cup mini marshmallows or whipped cream

Make a paste. In a saucepan, whisk the cocoa and sugar with 2 tbsp of the milk until smooth.

Heat the milk. Whisk in the remaining milk and heat over medium until steaming, not boiling.

Melt the chocolate. Add the chopped chocolate and whisk until completely melted and smooth.

Finish. Remove from the heat and stir in the vanilla and salt.

Serve. Pour into mugs and top with marshmallows or whipped cream.
