Stovetop Popcorn

Popcorn kernels popped in coconut oil in a covered pot, then tossed with fine salt and butter. Makes about 12 cups.

Popcorn

 3 tbsp coconut or neutral oil
 ½ cup popcorn kernels
 ¾ tsp fine salt
 2 tbsp butter, melted (optional)

Test the heat. Heat the oil and 3 kernels in a large covered pot over medium-high heat.

Add kernels. When those kernels pop, add the rest in an even layer, cover, and remove from the heat for 30 seconds.

Pop. Return to the heat with the lid slightly ajar. Shake the pot often until popping slows to 2–3 seconds between pops.

Season. Pour into a large bowl, drizzle with melted butter, and toss with salt.
