Ripe avocados mashed with onion, chili, cilantro, lime, and tomato for a fresh, chunky dip. Serves 6.

Homemade guacamole in a molcajete with tortilla chips

Guacamole

 3 large ripe Hass avocados
 2 tbsp fresh lime juice
 ¼ cup white onion, finely chopped
 1 jalapeño or serrano, seeded and minced
 2 tbsp fresh cilantro, chopped
 1 small tomato, seeded and diced
 ¾ tsp salt
 tortilla chips, for serving

Make a base. In a molcajete or bowl, mash the onion, chili, cilantro, and salt into a rough paste.

Add avocado. Halve and pit the avocados, scoop them in, and mash to your preferred texture.

Season. Stir in the lime juice and diced tomato. Taste and adjust the salt and lime.

Serve. Serve immediately with tortilla chips, or cover tightly with plastic wrap pressed onto the surface.
