Avocado Deviled Eggs

Hard-boiled egg whites piped with a silky avocado, yolk, lime, and mustard filling. Makes 12 halves.

Eggs

 6 large eggs

Filling

 1 medium ripe avocado
 1 tbsp lime juice
 1 tsp Dijon mustard
 1 tbsp mayonnaise or Greek yogurt
 ¼ tsp salt
 1 pinch black pepper

Toppings

 1 tsp whole-grain mustard
 1 green onion, thinly sliced
 1 pinch chili flakes

Boil. Place the eggs in a pot, cover with cold water, and bring to a boil. Cover, remove from the heat, and let stand 12 minutes.

Ice bath. Transfer the eggs to ice water for 10 minutes. Peel and halve lengthwise.

Make the filling. Mash the yolks with the avocado, lime juice, Dijon, mayonnaise, salt, and pepper until very smooth.

Fill. Pipe or spoon the filling into the egg whites.

Top and serve. Top with whole-grain mustard, green onion, and chili flakes. Serve chilled.
