Baked Garlic Butter Shrimp

Large shrimp baked in a lemony garlic butter sauce with paprika and parsley. Serves 4.

Shrimp

 1 ½ lbs large shrimp, peeled and deveined (680g)

Garlic Butter

 6 tbsp unsalted butter (85g)
 8 garlic, half minced and half thinly sliced
 1 lemon, zested and juiced
 ½ tsp smoked paprika
 ¼ tsp red pepper flakes
 ¾ tsp salt
 ¼ tsp black pepper

To Finish

 2 tbsp fresh parsley, chopped
 crusty bread, for serving

Preheat. Heat the oven to 425°F (220°C).

Arrange the shrimp. Pat the shrimp dry and spread them in a single layer in a baking dish.

Make garlic butter. Melt the butter with the garlic, lemon zest, paprika, red pepper flakes, salt, and pepper.

Bake. Pour the garlic butter evenly over the shrimp. Bake 8–10 minutes, until pink and just opaque.

Finish. Squeeze the lemon juice over the shrimp, sprinkle with parsley, and serve immediately with bread.
