1onion, chopped
3garlic, minced

2lbscarrots, peeled and chopped (900g)

1canfull-fat coconut milk (13.5 oz), divided

Sauté. Heat the oil in a large pot over medium heat. Cook the onion 5 minutes until soft. Add the garlic and ginger and cook 1 minute.

Simmer. Add the carrots, broth, and salt. Bring to a boil, cover, and simmer 20–25 minutes until the carrots are very tender.

Blend. Blend until silky smooth.

Finish. Stir in most of the coconut milk and the lime juice. Taste and adjust the salt.

Serve. Ladle into bowls and swirl in the remaining coconut milk. Top with cilantro and chili flakes.
