Make the simple syrup: Combine equal parts sugar and water in a small saucepan over medium heat. Stir until dissolved, about 3 minutes. Cool completely before using. Can be made 1 week ahead and refrigerated.
Juice the limes: Fresh lime juice is non-negotiable. Bottled lime juice tastes flat and metallic. Juice your limes, strain out the seeds, and refrigerate until ready to mix.
Combine: In a large pitcher or punch bowl, combine the lime juice, mango nectar, simple syrup, white rum, dark rum (if using), pineapple juice, and coconut water. Stir well for about 30 seconds.
Taste and adjust: Too sweet? Add more lime juice. Too tart? A splash more mango nectar or simple syrup. Not strong enough? Add a splash more rum.
Chill thoroughly: Refrigerate the whole batch for at least 2 hours before serving. A room-temperature punch with ice will melt the ice immediately and dilute the drink. Chilling the batch preserves the flavor balance.
Serve: Drop in your ice ring or large ice block. Float pineapple rings, mango chunks, and lime wheels on top. Add mint sprigs. Ladle into 8-oz glasses and serve immediately.
