Two tender red buttermilk layers with a hint of cocoa, filled and frosted with cream cheese frosting. Serves 12.

Prepare the pans. Heat the oven to 350°F (175°C). Grease two 9-inch round pans and line them with parchment.
Mix the dry ingredients. Whisk the flour, sugar, cocoa, baking soda, and salt in a large bowl.
Mix the wet ingredients. Whisk the oil, buttermilk, eggs, vanilla, vinegar, and food coloring in a second bowl.
Combine. Pour the wet mixture into the dry ingredients and stir until smooth.
Bake. Divide between the pans and bake for 28–32 minutes, until a toothpick comes out clean. Cool completely on a rack.
Make the frosting. Beat the cream cheese and butter until smooth, then beat in the powdered sugar and vanilla until fluffy.
Assemble. Level the layers, fill and frost the cake, and sprinkle the trimmed crumbs on top. Chill for 30 minutes before slicing.
