Pear Walnut Baked Oatmeal Cups

Soft, chewy baked oatmeal cups with diced pear, toasted walnuts, cinnamon, banana, and maple syrup. Makes 12.

Wet Ingredients

 1 large ripe banana, mashed
 2 large eggs
 1 cup milk, dairy or plant-based (240ml)
 ⅓ cup maple syrup
 3 tbsp unsalted butter, melted, or coconut oil
 1 tsp vanilla extract

Dry Ingredients

 2 ½ old-fashioned rolled oats (200g)
 1 ½ tsp baking powder
 1 ½ tsp ground cinnamon
 ¼ tsp fine salt

Mix-Ins

 1 large ripe but firm pear, diced
 ½ cup walnuts, toasted and chopped (60g)

Preheat. Heat the oven to 350°F (175°C). Grease a 12-cup muffin tin or line it with silicone or parchment liners.

Mix wet ingredients. In a large bowl, mash the banana, then whisk in the eggs, milk, maple syrup, melted butter, and vanilla.

Add dry ingredients. Stir in the oats, baking powder, cinnamon, and salt. Let the mixture rest 5 minutes.

Fold in pear and walnuts. Fold in most of the diced pear and walnuts, reserving about 1/4 cup for the tops.

Fill the cups. Divide the mixture evenly among the muffin cups and top with the reserved pear and walnuts.

Bake. Bake 22–26 minutes, until golden and set in the center.

Cool. Cool in the pan for 10 minutes before removing. Serve warm or store once cool.
