Homemade Hummus

Silky chickpea dip whipped with tahini, lemon, garlic, and ice water, finished with olive oil and paprika. Makes about 2 cups.

Hummus

 1 can chickpeas (15 oz), drained
 ½ tsp baking soda
 ⅓ cup tahini, well stirred
 3 tbsp fresh lemon juice
 2 garlic
 ¾ tsp salt
 ½ tsp ground cumin
 3 tbsp ice water, or as needed

To Serve

 2 tbsp extra-virgin olive oil
 1 pinch paprika
 fresh parsley and a few whole chickpeas

Soften the chickpeas. Simmer the chickpeas with the baking soda in water for 15 minutes until very soft. Drain and rinse, reserving a few for garnish.

Whip the tahini. Blend the tahini, lemon juice, garlic, and salt for 1 minute. Add ice water a spoonful at a time until pale and creamy.

Blend. Add the chickpeas and cumin and blend 2–3 minutes, scraping down the sides, until very smooth.

Adjust. Taste and add more lemon, salt, or water as needed.

Serve. Swirl into a bowl and top with olive oil, paprika, parsley, and whole chickpeas.
