Buttermilk-soaked wings coated in seasoned flour and cornstarch, double fried, and served with garlic yogurt dip. Serves 4.

Soak. Combine the wings, buttermilk, and salt. Refrigerate at least 30 minutes.
Coat. Mix the flour, cornstarch, and spices. Let excess buttermilk drip off, then press the wings into the coating.
First fry. Heat oil to 325°F (165°C). Fry the wings in batches for 8–10 minutes. Rest on a rack 10 minutes.
Second fry. Raise the oil to 375°F (190°C) and fry again 2–3 minutes until deep golden.
Make the dip. Stir together the yogurt, mayonnaise, garlic, lemon, and herbs.
Serve. Serve the wings hot with the dip and fresh vegetables.
