Two moist, spiced layers with grated carrots and walnuts, filled and topped with cream cheese frosting. Serves 12.

Cake

 2 all-purpose flour (250g)
 2 tsp baking powder
 1 tsp baking soda
 2 tsp ground cinnamon
 ½ tsp ground nutmeg
 ½ tsp salt
 4 large eggs
 1 cup packed brown sugar (200g)
 ½ cup granulated sugar (100g)
 1 cup vegetable oil (240ml)
 1 tsp vanilla extract
 3 finely grated carrots (300g)
 1 cup chopped walnuts (115g)

Cream Cheese Frosting

 8 oz cream cheese, softened (225g)
 ½ cup unsalted butter, softened (115g)
 3 powdered sugar (360g)
 1 tsp vanilla extract

Prepare the pans. Heat the oven to 350°F (175°C). Grease two 9-inch round pans and line them with parchment.

Mix the dry ingredients. Whisk the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.

Mix the wet ingredients. In a large bowl, whisk the eggs, brown sugar, granulated sugar, oil, and vanilla until smooth.

Combine. Stir the dry ingredients into the wet mixture until just combined. Fold in the carrots and walnuts.

Bake. Divide the batter between the pans and bake for 30–35 minutes, until a toothpick comes out clean. Cool for 15 minutes in the pans, then turn out onto a rack and cool completely.

Make the frosting. Beat the cream cheese and butter until smooth. Add the powdered sugar and vanilla and beat until fluffy.

Assemble. Spread frosting over one layer, top with the second layer, and frost the top and sides. Chill for 30 minutes before slicing.
