Thin beef strips marinated in yogurt, lemon, and warm spices, seared crisp and rolled in flatbread with garlic sauce. Makes 4.

Marinate. Whisk the yogurt, lemon juice, 2 tbsp oil, garlic, spices, and salt. Toss with the beef and refrigerate at least 1 hour.
Make the sauce. Stir together the yogurt or mayonnaise, garlic, lemon juice, and salt. Chill until serving.
Sear the beef. Heat 1 tbsp oil in a large skillet over high heat. Cook the beef in batches for 2–3 minutes, letting it char before stirring, until browned and crispy at the edges.
Warm the bread. Warm the flatbreads in a dry pan or microwave.
Assemble. Spread garlic sauce on each flatbread. Add lettuce, tomato, onion, pickles, parsley, and beef. Roll up tightly.
Toast and serve. Toast each wrap seam-side down in the skillet for 1 minute. Cut in half and serve.
