Banana Pudding Cups

Individual cups layered with homemade vanilla pudding, banana slices, vanilla wafers, and whipped cream. Makes 8.

Banana pudding cups topped with whipped cream and wafer crumbs

Vanilla Pudding

 ⅔ cup granulated sugar (133g)
 ¼ cup cornstarch
 ¼ tsp salt
 3 whole milk (720ml)
 4 large egg yolks
 2 tbsp unsalted butter
 2 tsp vanilla extract

Layers

 3 ripe bananas, sliced
 40 vanilla wafers, plus extra crushed for topping

Whipped Cream

 1 ½ cold heavy cream (360ml)
 ¼ cup powdered sugar

Start the pudding. Whisk the sugar, cornstarch, and salt in a saucepan. Whisk in the milk and egg yolks until smooth.

Cook. Cook over medium heat, whisking constantly, until thick and bubbling, about 8 minutes. Boil 1 minute more.

Finish. Remove from the heat and stir in the butter and vanilla. Press plastic wrap onto the surface and chill until cool, about 1 hour.

Whip the cream. Whip the heavy cream and powdered sugar to soft peaks.

Layer. In 8 clear cups, layer wafers, banana slices, and pudding. Repeat once more.

Top and chill. Top with whipped cream and crushed wafers. Refrigerate at least 4 hours before serving.
